Certain food products require ultra‑high‑temperature treatment, typically around 120 °C for a specified duration, to effectively eliminate pathogenic microorganisms. The sterilization retort is designed to provide a controlled high‑temperature and high‑pressure environment, ensuring that products achieve commercial sterility within the required time and temperature parameters.
Products such as glass bottles, metal cans, or pouch packs are placed on trays, stacked in multiple layers on a trolley, and then loaded into the retort for sterilization. After the process is completed, the trolley is removed from the retort, and the trays are unloaded layer by layer before the products are returned to the production line for downstream packaging operations.
Design
The size and capacity of the sterilization retort must be designed according to the required number of trolleys per sterilization cycle, ensuring that the retort can accommodate the specified trolley load while providing sufficient high‑temperature and high‑pressure conditions for effective batch sterilization.
